The sucrose content of jaggery varies between 65% and 85%. Solid, liquid, and granulated are the three forms of marketed jaggery. The light brown to dark brown color is common, though yellowish and reddish colored samples are also available. Jaggery also contains minerals, such as iron, calcium, and magnesium.
